How to Perfectly Add Seeds to Sourdough During Coil Folds

I like to add seeds to my sourdough during the first coil fold, which I find helps distribute them evenly without deflating the dough. Here’s how I do it:
1. First, I prepare the seeds—sometimes I toast them for extra flavor, letting them cool completely. For larger seeds like sunflower or pumpkin, I soak them briefly to keep them from pulling moisture out of the dough.
2. During the first coil fold, I sprinkle a portion of the seeds across the dough surface. The dough is a bit more extensible at this stage, so it’s easier to add them without tearing.
3. As I perform the coil folds the seeds start to mix in. In the following folds, they spread naturally and evenly throughout, embedding into the dough as the gluten strengthens.

I love this approach because it keeps the seed distribution consistent while preserving the dough structure and air pockets!
