Apple Caramel Pie Brioche Pudding

Ingredients
1 loaf of brioche bread, cut into 1” cubes (preferably dried overnight)
Apple Pie Filling: 4 Granny Smiths apples (peeled, diced), 5 tbsp butter, 1/4 cup flour, 1 tsp cinnamon, 3/4 cup brown sugar, 3/4 cup water
Egg mixture: 3/4 cup milk, 3/4 cup heavy cream, 1/4 cup sugar, 1 tsp vanilla, 1 tsp cinnamon, 3 eggs & 2 egg yolks

Instructions:
1. Preheat oven to 375°F. Grease a 9” baking pan and line with parchment.
2. Apple Filling: Cook apples, butter, flour, spice, sugar, and water until soft (10-15 mins).
3. Custard: whisk all ingredients together and slowly heat up til just warm.
4. Layer bread cubes and apple filling in the pan. Pour custard over. Let soak for 15 mins.
5. Bake for 45-55 minutes. Cool and enjoy with some ice cream and extra caramel apple filling.
