High-Protein Wrap with Homemade Protein Mayo

Ingredients:

For the Roti:
1 cup whole wheat flour
¼ cup beetroot purée
Water as needed
Salt to taste

For the Protein Mayo:
¼ cup paneer crumbled
8-10 cashews soaked
1-2 garlic cloves
1 green chili adjusted to taste
Salt to taste
Black pepper to taste

For the Oats Paneer Tikki:
Refer to Episode 3

For Assembling the Wrap:
2 oats paneer tikkis
1 onion sliced and mixed with chaat masala
Additional mayo for layering

Method:

Prepare the Dough:
In a bowl, mix whole wheat flour, beetroot purée, and a pinch of salt. Add water gradually and knead into a soft dough. Let it rest for 15-20 minutes.

Make the Protein Mayo:
In a blender, combine paneer, soaked cashews, garlic, green chili, salt, and pepper. Blend until smooth and creamy. Adjust seasoning as needed.

Prepare the Rotis:
Roll out the dough into thin rotis and cook on a hot tawa until both sides are slightly golden.

Assemble the Wrap:
Take a cooked roti and spread a generous layer of the protein mayo. Place two oats paneer tikkis in the center. Add masala onions on top of the tikkis. Drizzle more mayo for extra creaminess. Roll it up tightly and serve hot.
