Blackened Chicken:
⢠1 tsp salt, oregano, onion powder, garlic powder, paprika, and chili powder
⢠1/2 tsp pepper
⢠1/4 tsp cayenne pepper
Get your olive oil hot! & then sear in a cast iron skillet or pan for about 3-4 min on both sides, depending on how large and thick your chicken is.
The key to giving it a nice crust, is not moving your chicken until itâs time to flip! Add a squeeze of lemon and then let rest.
For the salad:
⢠romaine lettuce
⢠mini heirloom tomatoes, halved
⢠avocado, sliced and diced
Tahini Parmesan Dressing:
⢠1/4 cup of EVO
⢠2 fresh lemons, juiced
⢠2 TB tahini
⢠2 tsp Worcestershire
⢠1-2 cloves of minced garlic
⢠salt and pepper to taste
⢠1/3 cup of shredded Parmesan
Shake it all up, pour over your salad and enjoy! Let it sit in the fridge for a bit, and itâll be perfect for a hot summer dayđ¤Š
