It’s temperature and salinity when they are growing. Gulf is warmer than the Atlantic. Also the salinity of the Gulf is higher than the east coast.

Maryland crabs are sweeter because of the brackish water and also because of the cold winters. MD crabs hybernate all winter and this makes the meat more buttery.

We do boil our crabs maybe that's where the difference is. Typically boiled in seasoned water with corn potatoes and sausage .whole onions... alooooot of seasoning...some do shrimp and crab in same pot. It's not a bad crab, if you want it sweeter do your thing 😉 we usually drunk to

As a northerner become Floridian, cold water crustaceans are all around sweeter while warm water tends to be on the savory side.

I also think the MD crab is sweeter because it has to store more fat as it hibernate during the winter & colder temps. The LA crabs are in wam water and never had to Huber ate so their no need to build up a layer of fat. Also crabs grown in swamp or rivers just won’t taste the same as one’s caught in a Bay.

When I was in Louisiana we had a Bushel of Blue crabs! I made the statement (Maryland Blue crabs taste better), it's the truth! They were pissed saying i'm crazy, its mental, etc! They said you can't tell because most crabs in Marylabd come from Louisiana. You said what I said, Facts!

I’ve lived in Maryland and Louisiana and he is right. Louisiana crab is much fishier and savory which i quite in a dish but Maryland crab is so good on its own.

I think the colder waters farther north makes for sweeter crab meat. Like lobster, I think Maine lobster tastes sweeter than gulf lobster.

I live in NC along the coast. I have been lucky enough to have been just old enough to fish blue crabs from pots with commercial fisherman friends in the early 90s along the Neuse River (pre-pfiesteria) brackish water is the key to sweeter blues.

Boiling vs steaming is the difference in Florida they do both when u stream irs only seasoned outside u can taste the meat more natural, boiled the season gets in the shell

Ima Chef that moved to Houston from Baltimore. I purchased live local crabs from the gulf and could taste the difference immediately. Cooked with the same spices from Baltimore ant technique. They were still very good but it definitely a different flavor
