I would roast the pumpkin, blend it with chai powder, and make cookies. Churros would follow a similar trend with chai, sugar, and cinnamon dusting.
If you want savoury, I am a big fan of soup, making salad dressing, or in a burrito.

Stuffed pumpkin is a really fun thing to make! You can either roast it open face or put the parts together and roast it in foil (or smoke it, if you're feeling adventurous). Meat, cheese, veggies, whatever feels right to toss in there. It's like a stuffed pepper but doesn't fall apart!
