Don't use cold potatoes and liquids when doing mashed potatoes. You get glue that way no matter what.

There is a greater attachment on my food processor. What if I use that to sort of rice the potatoes and then stir in the cream/milk and butter?

You have uses the wrong potatoes, you should have milk or cream in the potato and emulsified the butter slowly, this is not it, Joel robuchon will show you
