You're gonna want to come back to this #recipe again and again! This one comes from @annafgass new book #italiansnacking - we can't wait to cook our way through it but I started here and she was happy to let me share it with you!

Makes 1 9-inch cake
1/2 C. evoo
2 C. AP flour
1 C. Parmiggiano reggiano
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
3 eggs
2/3 C. milk
1 C. toasted pine nuts
2 small zucchini, sliced into rounds
6-7 basil leaves, sliced into thin ribbons
*Preheat oven to 375°. Brush the bottom of a 9-inch springform pan with oil, line with parchment paper, and brush the paper and sides of the pan with oil.
*In a large bowl, whisk together the flour, half of the cheese, salt, baking soda and baking powder.
*Make a well in the middle of the flour mixture and add in the eggs, the oil, and the milk. Mix to incorporate.
*Fold in the pine nuts and all but about 20 slices of zucchini (save these for the top!). Fold in the basil.
*Transfer the batter to the prepared pan and spread evenly. Top with remaining cheese and zucchini slices. Drizzle with evoo. Bake for 45 to an hour, or until cheese and zucchini on top begin to brown.
*Cool completely before serving.
