being chronically online i found out that torch hei is its own thing separate to wok hei. very very similar taste if done right. there's an entire group of people online obsessing over it. personally i just think it's good cause i don't usually have half of a dying star powering my kitchen burner to be able to get that wok hei naturally.

Hello Chef! Some tips for fried rice, at start reduce the amount of oil just a little bit you dont want to sog your eggs in them you want to make them fluffy and try to mix the yolk more with the whites add oil later with rice while tossing them it coats them nicely add more heat to the wok and work it, there is no need for a blowtorch other than that looked good i bet it was delicious! Keep up the good work!

You put sauces (soy sauce here) in around the outside of the rice to help distribute it evenly, as it coats lots of the rice as it flows down to the middle of the wok

Great variety of really good home fried rice tips, the torch one and the soy sauce around the outside so it “burns” before you mix it in are both game changers for getting amazing products on weak home burners

I tell you this chef, you dont need to use that torch thing for the rice. Just go high heat at the time you throw the rice in with an extra eggyolk then balance it. Also use pork fat instead using any cooking oil. Hit me up if you like that

I make this with pork fat or beef tallow and it's amazing. Such a better flavor than canola oil
