I have an old Schrade with a gut hook that is a well-used tool. Also, for skinning, I have a home built rounded looking skinning knife. The handles are from an old butcher block. That knife was a project knife that taught me I do not like making knives, but it works and holds an edge. I don't mind sharpening my knives. Have a backup set handy. My processing table is a used stainless elevator door. Easy to clean for sure. A good vacuum sealer is essential, along with a meet ban saw and a sausage / hamburger grinder. Some cold Shiner beer in the refrigerator helps.
