After you pre-shape your dough and let it bench rest, the dough will have flattened out like a pancake. The edges should be rounded and thick or fat looking. If the dough is spreading too much and the edges don’t look tapered or are “dripping”, your dough needs more time to ferment. Pre-shape it a second time and give it another 20-30 minute bench rest.
