I'm Filipino. Let me explain the culture.
Balut is a night only delicacy. Preferably bought and eaten under or near a dim warm color light bulb like orange or yellow. Candle can do the trick too. It's to hide any visually unappetizing colors and visual texture for first timers. It's not only foreigners that is disgusted by the visuals of it, locals too. Balut is very delicious and full of good cholesterol and protein, you just need to hide(and forget) the baby duck thingy part 😅.
I've seen many Balut food review videos by westerners on YouTube and on TV, they usually eat it in a room with a very bright white light. Which is not a good setup to be introduced to it. They always gag and runaway after seeing it for the first time. 😂
