Try eggplant rolls the middle eastern way!! You can stuff them with cottage cheese with nuts and mint or ground meat.. you can eat them cold with a drizzle of pomegranate molasses.. or hot by laying the rolls on casserole with a layer of marinara sauce on the bottom and sprinkle cheese and broil!!! So yummy!!

How do you cook eggplant?
Grilling eggplant hasn't been a succes for me. It ended up tasting really bad - i just put olive oil and some salt on and then in the oven. Wonder what i did wrong π¬
