Aubergine and peanut curry! 🍆🥜🥵

Check out this really simple and delicious Aubergine and peanut butter curry alongside coconut rice and plantain.

Ingredients:
2 aubergines
1 white onion
3 tsp curry powder
1 tsp turmeric powder
1 tbsp all-purpose seasoning
1 tbsp garlic powder
1 tsp chili flakes
1 veg stock
2-4 tbsp peanut butter
200 ml coconut milk
1 tsp brown sugar
1 tsp soy sauce

Method:
1. Start by slicing up the aubergines into segments or cubes and shallowing frying them until brown then set aside.
2. Next dice onions and garlic and sauté until soft add extra oil if necessary at this point.
3. Then deglaze with vegetable stock and bring that up to a simmer.
4. Add peanut butter and allow this to melt into the sauce then add coconut milk to get your desired creaminess.
5. Add all-purpose seasoning and garlic powder optional add chili flakes to really give this recipe a kick.
6. Add the aubergines back into the sauce and submerge then allow to cook for 30 minutes on a low heat.
7. Add soy sauce and sugar and combine adjust flavours with salt and pepper.
8. Serve up a generous amount with coconut rice and plantain.

Please make sure to purchase olive oil in a wine colored bottle. It protects it from light and will take longer to become rancid. Please try a level 2 with dry toasted spices, fresh chili, tamarind, and brown rice. I noticed the fresh thyme instead of coriander 👍. The spinach added at the end reminds me of Indian panner saag. Please make a vegan version for your next video
