✨ Perfect for a quick, healthy meal that’s bursting with Mediterranean flavors. Ready in no time and full of wholesome ingredients like cherry tomatoes, olives, and spicy Calabrian peppers. 🔥🐟


Ingredients:
• 4 Cod Filets
• 12 oz cherry/grape tomatoes
• 1/2 cup @bonodisiciliausa Castelvetrano olives
• 1 whole spring red onion
• 1 tbs @bonodisiciliausa Calabrese peppers
• 1/4 cup olive oil
• 1 tsp oregano
• 3-4 thyme sprigs
• 3 garlic cloves, crushed
• 2 tsp salt
• Back pepper, to taste
• 1/4 cup white wine
• Grilled lemon, for garnish
• Basil leaves, for garnish

Instructions:
• 1. Preheat oven at 450 F;
• 2. Add tomatoes, sliced spring red onion, garlic, oregano, olive oil, Calabrian chili pepper, salt and pepper to a baking dish and mix well; roast for about 20 minutes;
• 3. Once veggies have softened, add wine; season Cod filets with olive oil, salt and pepper and nest them into the veggies;
• 4. Roast for another 12 minutes until bubbly and enjoy with some lemon!
