A soft shell lobster has recently molted, so in terms of market sizes you will get slightly less meat out of a soft chick than a hard chick but in terms of biology a soft shell lobster will have the most meat per volume because they literally could no longer fit in their molt. At the same time though, like oysters or other crustaceans, smaller usually = better/sweeter flavor.

I'm a Mainer myself, and the lobster here is the best. All my life I've tried both soft and hard, soft shell is the best despite having not having much meat and being watery, but hard shell has more possibility to be chewy rather than tender, but you just gotta get lucky when picking hard shell lol My favorite is the tail.

Hope he saved the liquid and shell pieces for making soup or chowder. I had a friend from Maine who loved that soft-shell lobsters, or "chicken lobsters", as she called them. They had less meat, but the meat was far tastier especially. for use in Lobster Rolls. The liquid and shells also made for a better lobster stock as well...
