Animal free dairy milk created using Precision fermentation could be used to make cheeses which are not just an imitation but the real thing without the animal. Unfortunately animal free dairy milk from Precision fermentation is quite expensive compared to traditional dairy milk and turning it into cheese would make it even more expensive. It is hard for these sort of products to compete in the Marketplace when governments like the United States so heavily subsidized animal products

Delicious looking Ruben! Have you tried Mrs. Goldfarbs Unreal Deli? I have not and have been curious. It was being served at Canter's Deli on Fairfax, but I'm not sure that it still is, and I don't know if the cheese at Canter's is vegan either. I'm up in Oregon, and I'd love to see you try it!

If u can’t find the best vegan Swiss in LA then it’s probably not in the US 😢 but maybe the Rebel Cheese Gruyère might be the closest?? They have the BEST vegan artisan cheeses by far 😍(that I’ve tried anywa

I have personally found with Daiya it needs to be really melted like with that ruben I would probably have put the slice of bread with the cheese on its own and done the steaming trick to get it real gooey and then put it all together.

I like Swiss melted. It tastes a lot better than a non melted slice. It's too strong. Alpine Lace is goo though/ I love a nice Reuben

I don't hate on being vegan or vegetarian but I do have to say your replacement will never be as good as the real thing we as humans have tried alot alot and its just probably never gonna happen plant cells and animal cells are to different

No offense, but if you want swiss... get swiss. Otherwise, you don't need "vegan swiss cheese"
Either be a vegan or don't lol
Vegans do have lots of brilliant dietary options, but you'll never be a true vegan until you actually stop trying to simulate an omnivorous diet
