The mind plays tricks on you and when you start running out of fear your instinct tells you to get more and more freaked out so you don't stop running even though you didn't see anything.
That's what i think happened anyway.
To be honest i kinda hope it was something paranormal though because it would be very intriguing in a wierd way.

Possible explanation: When wind blows through the catacombs crevices, it generates a tone that messes with the brain and can cause hallucinations or panic which possibly might be his case, we still don't know, he could be running from cataphiles or people that live in the catacombs. He is suspected to be in the unexplored depths of the catacombs since where there is graffiti, that part has been explored, he might be in the deepest and unexplored areas of the catacombs.

If the video is real ( people are so easily spooked these days), it's a man running from himself. The dark and the silence gets to you, but also the lack of oxygene and possibly toxic gasses. He may have realised he was about to suffocate. It used to me a mine after all.

I believe it was the realization that he was lost, and that his light might run out of battery that made him start to panick and sprint in despair of finding an exit
