Cheese Masala Dosa is a delicious fusion of South Indian dosa and a cheesy, spicy potato filling. It’s crispy on the outside, soft inside, and loaded with flavors. Here’s how you can make it at home:

Ingredients

For Dosa Batter:

2 cups dosa rice

½ cup urad dal (split black gram)

¼ teaspoon fenugreek seeds

Salt to taste

Water as needed


For Masala Filling:

2 medium potatoes (boiled & mashed)

1 small onion (chopped)

1 green chili (chopped)

½ teaspoon mustard seeds

½ teaspoon turmeric powder

½ teaspoon red chili powder

5-6 curry leaves

1 teaspoon ginger (grated)

2 tablespoons oil

Salt to taste

2 tablespoons coriander leaves (chopped)


For Cheese Topping:

½ cup grated cheese (cheddar or mozzarella)


Instructions

1. Prepare Dosa Batter:

Soak rice, urad dal, and fenugreek seeds for 6 hours.

Grind to a smooth paste with water and ferment overnight.

Add salt and mix well before making dosas.


2. Make Masala Filling:

Heat oil in a pan, add mustard seeds, and let them splutter.

Add onions, green chili, curry leaves, and ginger; sauté until onions turn translucent.

Mix in turmeric, red chili powder, and salt.

Add mashed potatoes, mix well, and cook for 2-3 minutes.

Finish with chopped coriander leaves and set aside.


3. Make Cheese Masala Dosa:

Heat a dosa tawa and grease lightly.

Pour a ladle of batter and spread into a thin circle.

Drizzle oil or butter around the edges.

Once golden brown, spread potato masala over half of the dosa.

Sprinkle grated cheese generously over the masala.

Fold the dosa and let the cheese melt.

Serve hot with coconut chutney and sambar.
