a few grams more or less of butter or sugar really doesn't matter unless it's molecular science, but a scale is useful because it's quicker. for ingredients, better examples would be flour (packed or even spooned and levelled flour wouldn't give the same amount of grams in the recipe), where i live they mainly sell medium to small sized eggs so if possible, being able to weigh egg whites more accurately changes the whole outcome, less hassle cleaning measuring cups just add chunks of butter or pour anything until the number reaches the correct amount of grams
