This is an easy and healthy breakfast with simple ingredients. The cream cheese frosting really makes it, so don’t pass that up (and there’s added protein from greek yogurt!)

Here’s what you need to make this:

1 1/4 cup @‌onedegreeorganics oats

2 carrots chopped or shredded (3/4-1 cup)

1 cup Just Ingredients vanilla protein powder (JOYFUL saves $)

1/4 cup chia seeds

1 tsp cinnamon

1/3 cup raisins

dash nutmeg

dash salt

1 cup greek yogurt

1 cup milk of choice

Mix dry ingredients in a large bowl and then add the rest of the ingredients and mix well. Pour into a sprayed 13x8 casserole dish and bake at 350 for 30 min. While that’s baking, make the icing:

Icing:

3 oz softened cream cheese

1/4 cup greek yogurt

2 tbs monk fruit powdered sugar

Mix together until smooth and spread on top of baked oatmeal once it’s cooled for about 5 min. The oatmeal will firm up as it cools, so don’t worry if it doesn’t look like it’s totally solid.
