I'm a chef and a pro tip for potato chips (or any fried food) is to salt them IMMEDIATELY after removing them from the oil. This ensures that the salt actually sticks to the food instead of bouncing off when you try to salt them later

Tip for the oil: if you don't have a thermometer, drop in a raw grain of rice. If it sinks it's not hot enough, but if it immediately floats back to the surface and stays there then your oil is ready for frying 😊

I used to make potato chips like this as a teenager but I didn’t have a mandolin so it took forever slicing each potato by hand and I would only have like one small serving of chips but it was so worth it. 🤤

A tip for using a mandoline: get metal mesh gloves! They are usually used for woodworking and fencing, but if you are nervous around mandolines or using one for the first time, they will protect you. ❤

Pro tip for puffier chips - After slicing, soak the potatoes in hot water(add some salt in the hot water so that the potatoes soak the salt taste) for 2-3mins or until it's half cooked and dry under the sun or under a fan until it's fully dry and crisp . And then deep fry them and enjoy ❤.
It's a bit tedious, but trust me, they taste better this way .

Chips were always easy to make. They just go stale in a few hours if exposed to oxygen. That's why they're packaged with nitrogen so they can be stored for months and enjoyed anywhere.
