Instructions:
Peel the potatoes and cut them into thin, even-sized chips or fries. You can use a knife or a French fry cutter for this.
Rinse the potato slices under cold water to remove excess starch. This step helps achieve crispier chips.
Place the potato slices in a large bowl and cover them with cold water. Let them soak for about 30 minutes. This step helps remove more starch and helps prevent the chips from sticking together while frying.
Drain the potatoes and pat them dry using a kitchen towel or paper towels. Make sure to remove any excess moisture.
Heat vegetable oil in a deep fryer or a large, deep pan to around 180°C (350°F). You'll need enough oil to fully submerge the potato chips.
In batches, carefully add the potato slices to the hot oil. Fry them for about 5-6 minutes until they turn golden brown and crispy. Avoid overcrowding the pan as it can lower the oil temperature and result in greasy chips.
