I have another idea of you want lower polys, don't extrude the text object, run 'limited dissolve' on it so the becomes a blank slate, take a plane and subdivide it. Extrude the text through the plane and then use the bool tool and apply the modifier, extrude your flat plane which is now shaped as the text and voila. Now depending upon the level of geometry you used, you'll get a mostly Quad mesh with a lower/higher poly count. I feel like this method gives me a lot more control over the poly count and i use this for custom svg objects that i make from Illustrator or odd shapes that need a little bit of sculpting. Hope this helps❤️

One more thing i'd like to add that I just experienced recently. If you're trying to engrave text on a curved object, you may have problems using boolean modifiers. It took me 2 days to get frustrated and find the solution for it, but i learned that if you have non manifolds in your mesh, it can create a lot of problems.
The quick solution for me to fix non manifolds was to use a plugin called 3d print toolbox (it is built in blender, you just have to enable it from preferences), and it has an option to make manifolds. I hope that helps someone.
