Created by Joao Paulo Balzani at Aqua Spirit in Hong Kong. I found the spec on Difford’s Guide. For my tastes I slightly raised the lemon juice from 10ml to 15ml and used a 1.5:1 honey to water syrup as opposed to a 3:1
Can’t beat a refreshing sour sometimes
45ml/1.5 oz Cachaça
20ml/0.7 oz Aperol
20ml/0.7 oz Limoncello
15ml/0.5 oz Lemon juice
5ml/0.18 oz Honey syrup
Foamer of choice (I used egg white)
3 Basil leaves, muddled
