Took me a bunch of tries but eventually got him with the dark moon gs.

Try getting a heavier poise breaking weapon. Katanas are good, but not that good against smaller, high poise enemies. Something like a greatsword or a curved greatsword would do great in this fight

Have you tried getting gud? But in all seriousness, I was able to beat it with just a few scadutree upgrades. I think got to level 2 or 3 and and my personal level was around 160. He's pretty easily payable and it takes a nice chunk of his HP when you do.

Its hard, but you might want to have prepared a bit more. Its possible to dodge all of his attacks, but its smart to learn them first. Try a run of just dodging without attacking. Sometimes that helps
