Ingredients (for 2 servings):
4 eggs
2 small zucchini
100g cottage cheese
2 small tomatoes
1 small onion
Spices: red pepper, black pepper, and salt
30g parmesan cheese
Instructions:
Preheat the oven to 350°F.
Slice the zucchini, onions, and tomatoes and place them in a pan.
Beat the eggs with a fork, then mix in cottage cheese and spices.
Pour the egg mixture over the veggies in the pan.
Bake for 30 minutes, then add parmesan cheese on top and return to the oven for another 5-10 minutes.
Serve with a green salad or a salad of your choice for a complete meal.
