Khichdi & Beguni Recipe – A Perfect Comfort Meal
Ingredients:
For Khichdi:
1 cup rice
½ cup moong dal (yellow lentils)
1 medium onion (chopped)
1 medium tomato (chopped)
1 small potato (cubed) (optional)
1 carrot (chopped) (optional)
1 green chili (slit) (optional)
1 tsp cumin seeds
1 bay leaf
½ tsp turmeric powder
½ tsp red chili powder
1 tsp garam masala
1 tbsp ghee (clarified butter)
1 tbsp oil
Salt to taste
3 cups water
For Beguni (Eggplant Fritters):
1 medium-sized eggplant (sliced into thin rounds)
½ cup gram flour (besan)
½ tsp turmeric powder
½ tsp red chili powder
½ tsp carom seeds (ajwain) (optional)
