//Stuffed Dahi Paneer Paratha//
Stuffing
1. 1/2 cup Hung Curd
2. 1 cup Paneer/cottage cheese, crumbled
3. 1 tsp Chilli powder
4. 1 tsp Dhana Jeera Powder
5. ½ tsp Garam masala
6. ½ tsp Carom seeds (Ajwain)
7. 1 tsp Kasuri methi
8. 1 tsp Chat Masala
9. Salt to taste
Method
1. Pair a clean cloth over a sieve or colander to prepare hung curd. Pour warm thick curd and tie tight. Rest for 5 hours or until all the water drops off.
2. Take crumbled Paneer, hung curd, red chilli powder, garam masala. dhana jeera powder, ajwain, kasuri methi and salt. mix well.
3. Mix well forming a soft stuffing mixture. keep aside.
For Dough
1. 2 cup wheat flour
2. ½ tsp salt
3. Water for kneading
4. 2 tsp oil
Method
1. In a large bowl take wheat flour and salt. Mix well.
2. Add water and knead the dough. Knead to a smooth and soft dough adding water as required.
3. Further add oil and knead the dough.
4. Knead to super soft dough. cover and rest for 20 minutes.
Paratha
1. Pinch a ball-sized wheat dough and dust it with wheat flour.
2. Roll it in a circle of about 5 in circle.
3. Place a ball-sized stuffing in the centre.
4. Take the edge and start pleating bringing it to the centre. Join the pleats together and secure them tight pinching off excess dough.
5. Sprinkle some wheat flour and roll slightly thick.
6. On a hot tawa place the rolled paratha and cook for a minute.
7. Flip the paratha when the base is partly cooked.
8. Add oil/ghee and press slightly.
9. Flip again till both sides are cooked.
10. Serve hot dahi with sauce, raita or pickle.
