I love to make peach ice cream too. I just peel and slice my peaches and freeze em. Then I boil the peels and make jelly with the juice.

Remove skins, slice, freeze in single layer on cookie sheey until frozen. Place in ziplock bags and use for smoothies, peace pie in winter, etc.
