SPINACH ARTICHOKE DIP RECIPE
14 ounce can of ARTICHOKE HEARTS drained - chop up the artichoke hearts if you prefer (my can was 13.5 ounces but worked fine)
1/2 cup of MAYONNAISE
1/2 cup of SOUR CREAM
8 ounces of CREAM CHEESE (softened to room temperature)
1 clove of GARLIC, minced
1/2 cup to 2/3 cup of SPINACH thawed. Squeeze out all the excess liquid.
1 cup of freshly grated PARMESAN CHEESE (measure this amount loosely and reserve about 1/4 cup for the top)
Preheat oven to 350 degrees.
in a mixing bowl, place the drained artichoke hearts, mayo, sour cream, softened cream cheese, garlic, spinach and 3/4 cup of freshly grated parmesan cheese. Mix well. Spread into a greased 8x8 pan. A pie pan will work as well. Sprinkle the remaining 1/4 cup of parmesan cheese on top. Bake for 18-20 minutes. Serve warm with pita chips, crackers, or tortilla chips. Enjoy!!
