I had egg custard cooked in my instapot today. So delicious. One to one ratio of eggs to liquid (water is great), add keto sweetener (I use maple flavoring and liquid sucralose), vanilla and cinnamon. Stick it in a thin-walled bowl (for good heat transfer), cover with foil or silicone, and put it in the instapot on low pressure for 15-18 minutes (depending on how firm you like it). Thanks for posting these ideas! Consider a link to an explainer for the difference between vegetarian and vegan.. ;)

The cheddar looks like jack. I've been making omelets with parm reg, avocado and boiled oysters lately. I lightly fry up the boiled oysters before putting them in the omelet. Don't knock it 'til you've tried it. The other fats blend with the oyster fats, especially if you include a poached egg inside. That makes it about the best way to consume oysters, which are high in copper, zinc and other vitamins and minerals. It's worth having once a week during bug season.

Gonna be honest, if I had to eat vegetarian, my egg / dairy intake would exceed my intake of vegetables.
