That armor (or at the very least the helmet) for the knight is specifically for jousting. Hyper specialized for head protection over general battlefield utility. That's why it's curved like that and why the eyeholes are kind of weird

Well they are both adapted to the type of warfare they have in their respective country. Both are good so it doesn't really make sense to try find which the best between the two.

I think the armor design has influence in the local environment.
Japanese had to fight under harsh sunlight and humidity, so the making more breathable armor makes sense.
As well as their focus on archery too.
Manchurians, and even Koreans back then were using brigantine, which sacrificed some level of protection in return for flexibility since they had heavy focus on mounted archers.
