That looks really good. I would line the the potato with some meat then put the cubed cheese in it. Then top with more meat, and then like one comment said put the grated cheese on top the last ten minutes. Thank you for the great idea.

I think more liquid like tomato sauce needs to be added to the meat. The potatoes need to be carefully scooped out more. You can see this. At the end when they are taken out of the oven and cut in half. Too much potato. Scoop more out carefully. Spread cheese inside. Meatball needs to be flattened a little more because you want the potato to absorb some flavor.

What is oozing out from behind, on that plate?
It would be easier to make broiled, seasoned hamburgers, or cheeseburgers, and some sort of boiled potatoes. Simpler is best.

Dont add the cheese until close to the end of the cook time.
Personally... my Grandmother made something similar, but much better presentation.....she scooped out more of the potato... and no cheese... . she served it with Brown Gravy ,and a side of French Peas. She saved the scooped out portion of the Potatoes to make potato cakes ,fir breakfast, or another meal.
