I literally had the same problem with the same journey had to take of the flange that the oil filter screws into and pry the o ring up it was like melted onto there why I just do it myself now

It's always going to be a pain if you grab the filter at the end. Easier to grab the filter closer to the base plate and spin.

Next time get the engine up to operating temperature. Heat expands. If you do the oil change with the engine cold it won’t be as tight when things heat up,
the oil filter may weep or worse over multiple heat cycles.

Use grease on the o-ring, not oil. Silicone grease preferably. It takes very little, and the filters are actually removable.

Yeah, you probably should just take it to the shop next time. Some people just shouldnt work on their cars.
