Quick and delicious Rajma Aloo Curry – a Punjabi-style dish perfect with rice or roti. 🍛

Ingredients:
• 1 cup soaked rajma (kidney beans)
• 2 medium potatoes (diced)
• 2 onions (chopped)
• 2 tomatoes (chopped/pureed)
• 1 tsp ginger-garlic paste
• 2 tbsp oil
• Spices: cumin, turmeric, red chili, coriander powder, garam masala, salt

Method:
1. Pressure cook rajma until soft.
2. In oil, sauté cumin, onions, and ginger-garlic.
3. Add tomatoes and spices, cook until oil separates.
4. Add potatoes, sauté, then mix in rajma with water.
5. Cook until potatoes are tender.
6. Garnish with coriander and serve hot.
