Can I offer some humble tips from a meat cutter/chef. New York strip is a fine cut but the first one you had is from closer to the sirloin end of the strip so there is a big line of gristle right through the middle of the steak. The pan you have is perfect for high heat blasting but the olive oils smoke point is from 390-470 degrees meaning it will oxidize and break down. Actually creating harmful chemicals you will ingest. Not only that it is certain to have a charred burnt flavor on the outside of the steak. I’d reccomend grape seed or avocado oil much higher smoke point stays stable at those temperatures.
