I would NEVER put my pork chops in the oven at 400°!! The meat will be absolutely hammered and tough as an old boot!!
Instead, cover the pan tightly in foil, shiny side down and put it in a COLD oven. Bake at 300° for two hours. Put the potatoes on a separate pan and put in the oven with ~40 minutes left on the meat. You can still enjoy them together but your pork will be tender and juicy.
I learned this method from a professional barbecue chef, except that he actually recommended cold oven, 2.5 - 3 hours and 275°. It works either way, depending on YOUR cook time.
