You should have used the appearance panel instead and you would have had ONE single live (editable) text object. Give it a fill and a stroke. In the appearance panel, select the fill and add an effect (the scribble effect, as you did before). Then, select the stroke and give that the scribble effect (again, as an effect in the appearance panel). If you want the stroke to be shifted over a bit for effect, just give that a distort effect. Now, your text is still fully editable as one single object. You can now save this as a graphic effect for future use on other objects or text.
