RESTAURANT STYLE 19B SOUP
Ingredients:
Oil 2 tablespoons
Chicken Breast 1 (cut into very small cubes)
Prawns 6-7 (tail & shell removed, cut into small chunks)
Carrot 1/2 (medium sized, chopped)
Shiitake Mushroom 4 (chopped) or any mushroom
Cremini mushrooms 2 (chopped) or any mushroom
Garlic (minced) 3 cloves
Chicken Stock 4 glass
Chicken Powder 1 teaspoon
Black Pepper Powder 1/4 teaspoon
Oyster Sauce 1.5 tablespoons
Dark Soya Sauce 1 tablespoon
Sugar 1 teaspoon
Chilli / Sriracha Sauce 1 tablespoon
Egg (beaten) 1
Spring onion (green part, chopped) for garnish
Cornflour Slurry as required (3 tablespoons heaped cornflour mixed with 3 tablespoons of water)
Instructions:
Prepare all the ingredients beforehand and set them aside.
Heat oil in a large pot over medium heat.
Sautรฉ minced garlic for 10-15 seconds until fragrant.
Add in chicken, sautรฉ it for 2-3 minutes until colour changes to white.
Add sliced mushrooms and carrots; sautรฉ it for couple of minutes.
When done, pour chicken stock in the pot and bring it to a gentle simmer.
Stir in chicken powder, black pepper powder, oyster sauce, dark soy sauce, sugar, chilli / sriracha Sauce in the simmering stock.
Check seasoning and adjust it to your liking and taste.
To thicken the soup, add in cornstarch slurry which is made with equal parts of cornflour and cold water. It's essential to use chilled water to make the slurry to ensure a smooth dissolution.
Gradually add the slurry to the simmering soup, whisking/mixing continuously to prevent lumps. Pour slowly, maintaining a steady whisk until the desired consistency is achieved.
Thoroughly cook the soup for several minutes after adding the slurry to eliminate the raw taste of the flour.
When done, add prawns to the soup and give it a good stir.
Note: Add prawns towards the end to prevent overcooking.
Now to create egg ribbons just like you find it in the restaurant soup, pour the beaten egg slowly into the simmering soup in a slow stream.
Mix gently to avoid breaking the ribbons. Simmer undisturbed for 1 minute, allowing eggs to cook.
Delicious restaurant quality 19 B Soup is ready now, turn off the heat and serve it hot with Garlic bread or crackers of your choice and enjoy.
