The ACTUAL best boss in the Dark Souls series. Hands down. And one of my favorite FAFO bosses. You think he's gonna be like Artorias but then he becomes guts in phase 2 and then turns into an absolute monster throwing away all of his pride as a knight just to get the small fragment of the dark soul you have in phase 3, just so his lady can paint the world anew.

I thought he sent you to the future (the ringed city) and while you are away he canibalizes all creatures that have dark soul. Then he waits for you at the end of time when the task is almost complete to stop him because he knew he will go crazy.
But thats just my interpretation

After playing ds 3 I get why gael is so loved, at the end of time, where everlasting dragons and gods fought, only 2 humans stand, you and gael, fighting, all the ages of fire led to this, a fight with not a god nor a dragon, a human that has been through all, from the sunlight filled days of gwyn to the dreadfull grey plains of the end of time, all to get the pigment to create a gentle cold world where humans can live in peace without the meddling of gods.

There's a very good reason that Gale was the perfect boss to end the series on. We were hinted about the dark soul, the soul of humanity, through the whole of the series from the Futive pygmy and Manus in ds 1, to the human effigies in 2 to the Abyss watchers and Abysal enemies in 3 the game was always showing how Humanity, the Abyss and Dark soul where all tied together but never fully showing how or why till Gale searching for a source to help paint and create a new world which was why he had to go to the ends of time cause it was the end of that world the end of the age of fire where the entire dark soulwould be gathered prepared to start a new world centered on the Abyss.
Gale fell to the Abyss in his hunt for the dark soul like many others had before him but he didn't just fall to part of it, no he fell to the whole of the Abyss, the whole of the Dark soul, the sum of humanity itself.
