SIMPLE - because the phone's center of mass lies on the rotation plane in case 1, and on the rotation axis line in case 2. While in case 3, the center of mass doesn't lie on the rotation axis, hence the center of mass position shifts out of the rotation line, hence forces the device to rotate around the other dimension. It happens because the internal parts weigh differently and are not evenly distributed inside the device. For example, the battery is not centered inside of the phone and is the heaviest part.
