That screw did not have that much travel, thus the need to edit the video - he stopped to make the correct repair, and then he turned the camera back on.
And it looks like he twists the cable the wrong direction. I realize he is going to crimp it, but I think the cable would be more likely to hold in the crimp if the cable wires were not forced to spin the opposite direction from the rest of the brake cable.
