Tbf I don’t do any of this b0llocks. I just put the fish in the pan skin side down. Cook for 80% of the cooking time on that side then flip and finish. Crispy every time lol no need to waste salt.

Heating salt in the pan is a way to clean excess burnt oil coating off it, without having to scrub it completely which means you would need to season it again.

The easiest way to get crispy skin is to leave fish skin side up overnight uncovered in either walkin or fridge. Press down for a few seconds while frying., that's it

What's the point of the salt if you're going to add oil later anyways? Why not just get a smoking hot pan with cold oil then sear the fish? I've done it many times without sticking.
