Ingredients:
Paneer (पनीर): 250 grams, cut into cubes
Kashmiri red chilli powder (कश्मीरी लाल मिर्च पाउडर): 1 tsp (optional)
Turmeric powder (हल्दी पाउडर): 1/2 tsp (optional)
Oil (तेल): For frying
Cumin seeds (जीरा): 1 tsp
Coriander stems (धनिया की डंठल): 2 tbsp, finely chopped
Onion (प्याज): 1 large, finely chopped
Garlic (लहसुन): 4-5 cloves, finely chopped
Green chilli (हरी मिर्च): 2, finely chopped
Capsicum (शिमला मिर्च): 1, diced
Onion (प्याज): 1, diced
Vinegar (सिरका): 1 tbsp
Soy sauce (सोया सॉस): 1 tbsp
Ketchup (टोमैटो केचप): 1 tbsp
Red chilli powder (लाल मिर्च पाउडर): 1 tsp
Black pepper powder (काली मिर्च पाउडर): 1 tsp
Salt (नमक): To taste
Sugar (चीनी): A pinch
Coriander leaves (धनिया पत्ते): For garnishing
Water (पानी): As needed

Instructions:

1. Prepare the Paneer:
In a bowl, add paneer cubes and coat them well with Kashmiri red chilli powder (कश्मीरी लाल मिर्च पाउडर). You can skip this step or use turmeric powder (हल्दी पाउडर) or red chilli powder (लाल मिर्च पाउडर) as an alternative.
Use your fingers to ensure each paneer cube is well coated.

2. Fry the Paneer:
Heat oil (तेल) in a wok (कढ़ाई). Check the temperature by dropping a small piece of paneer; if it sizzles and rises to the surface, the oil is ready.
Add the paneer cubes to the hot oil and let them fry undisturbed for 2-3 minutes.
Flip each paneer cube and continue frying until they are golden brown.
Once fried, remove the paneer cubes and place them in water (पानी) to keep them soft.

3. Prepare the Gravy:
Heat oil (तेल) in a pan. Once hot, add cumin seeds (जीरा) and let them splutter.
Add finely chopped onions (प्याज), garlic (लहसुन), green chilli (हरी मिर्च), and coriander stems (धनिया की डंठल). Stir and cook for a few minutes until the onions turn translucent.
Add diced capsicum (शिमला मिर्च) and diced onions (प्याज) and stir for a couple of minutes.
Add vinegar (सिरका), soy sauce (सोया सॉस), and ketchup (टोमैटो केचप). Mix well.
Pour in some water (पानी) or the water in which the paneer was soaked.

4. Season the Gravy:
Add red chilli powder (लाल मिर्च पाउडर), black pepper powder (काली मिर्च पाउडर), turmeric powder (हल्दी पाउडर), salt (नमक) to taste, and a pinch of sugar (चीनी). Stir well to combine.
Add the paneer cubes to the gravy and sprinkle with chopped coriander leaves (धनिया पत्ते).
Cover and cook for 5-6 minutes to allow the flavors to meld together. If you want more gravy, add additional water (पानी).

5. Final Touch:
Once cooked, the gravy will thicken as it cools down.
Serve hot, garnished with more coriander leaves (धनिया पत्ते) if desired. Enjoy your delicious and healthy Paneer Chilli without cornflour!
