I was chief char walla on a Sikh Building Site. We had Chai made with Whole Milk, fennel, cardamom, ajwain seeds. Sugar

One of my favourite things when being driven between Satara and Pune was when the drivers asked if it was OK to stop for a Chai. I told them, 'Always!'. I love the rich flavour of the Chai and seeing it being made with a football sized cheese cloth 'bag' of tea and the spices was great. I really liked the huge copper tea pot the Chai was poured into, ready to serve probably a hundred cups of the best drink ever.
