What convinced me was starting with a different first premise:
Assuming the resurrection didn't happen, the apostles had no reason whatsoever to continue believing Jesus was the Messiah. No conception of the Messiah in the first century held that he was to be killed by the enemies of Israel. So, if nothing happened after, they should have been embarrassed they every followed the guy and never spoke of it again.
The apostles all accepting death for their belief in the resurrection doesn't prove the resurrection in itself, but it does prove they sincerely believed it (i.e. they weren't attempting to deceive. They weren't lying).
But if there was no president for a murdered Messiah, and yet they believed wholeheartedly that he came back from the dead, then something happened that convince them that was the case.
At this point, historical evidence runs out and we're left with a choice. Do we believe what the apostles said or not? And what they said was, emphatically and and unambiguously, that Jesus rose from the dead (literally in the body, not some metaphor) and appeared to them all, and 40 days later ascended to heaven.

I apologize for a weird question — and it’s even weirder because I’m catholic and I do believe in the Resurrection — but what if Magdalene organized the “resurrection”, helped by some men, and convinced the apostles that it was true? They would still go to their martyrdom, because convinced, even if it hadn’t happened, right?

If the best way to test their level of conviction in the resurrection is to see how much danger they were willing to put themselves in to spread the message.... Doesn't Jesus fail that test? He never put himself in any danger to preach the resurrection, so he mustn't have been that confident in it, no?
Or are you oversimplifying the issue slightly I wonder.

Even John wasn’t threatened with death but was miraculously saved every time they tried to kill him. And he suffered greatly during his life for his faith
