Symptoms you get from overfilled oil can be burning oil, vibrations, smoke from the exhaust, poor running, bad idling or warped conrods and broken pistons.

It does depend on the car, a 4 cylinder is usually more sensitive to a large capacity v8 - it is the percentage of too much oil rather than just pouring in a quart too much that matters.
