They covered this on fight science. You can actually generate far more power when punching a downed opponent in the mount. This is because you have gravity and most of your body weight as leverage.

The only reason that the fighter on the bottom wasn't getting vaporized was because he was hunched up against the cage, thus, he smothered a lot of the power that could have been generated with a bit more distance.

Random Dude On The Internet here, most effective exercise shown here is the Loaded Squat Jumps. The others are solid, but the Loaded, even Unloaded, Squat Jumps will do.

Other top ones are
+ Push Press
+ Hang Clean
+ Various Plyos: Broad Jumps, Vertical Jumps, Lateral Jumps (all bi or unilateral)
+ and, of course, the KING of all explosive leg exercises: SPRINTS!

Also, doing explosive pylometrics like the jumps with dumbells is way more catabolic than anabolic. This means you can do that without much worry at all about getting huge legs since there is a lot of aerobic cardio going on.

Doing squats and machine presses like Tom Platz is another story.
