:Ingredients
2cup ragi (finger millet) flour
1/2 cup jaggery (grated or powdered)
1/4 cup ghee (clarified butter)
2-3 tablespoons roasted sesame seeds or chopped nuts (cashews, almonds, etc.)
1/4 teaspoon cardamom powder
Instructions
Roast the Ragi FlourHeat a pan on low-medium flame and dry roast the ragi flour until it turns aromatic and slightly darker in color.
Stir continuously to avoid burning. This should take 8-10 minutes. Transfer it to a plate and let it cool.
Melt the JaggeryIn a small pan, add jaggery with 2-3 tablespoons of water.
Heat it until the jaggery melts completely. Strain the syrup to remove impurities and set it aside.Roast dryfruits and sessameseeds (Optional)In the same pan, lightly roast the ingredients for 2-3 minutes and set aside.
Combine the IngredientsIn a mixing bowl, add the roasted ragi flour, sesame seeds/nuts, and cardamom powder.
Jaggery SyrupPour the melted jaggery and warm ghee into the dry mixture.
Mix thoroughly with your hands or a spoon until the mixture comes together like a dough.
Shape the LaddusTake small portions of the mixture and shape them into laddus (round balls) using your palms.
If the mixture feels dry, add a bit more ghee or jaggery syrup.Set and StoreLet the laddus cool completely and store them in an airtight container. They stay fresh for up to a week at room temperature or longer when refrigerated.
